Recipes

If you have a good, somewhat easy, somewhat healthy recipe that you wouldn't mind sharing with me...please do. I am trying to come up with a few new meals for dinner. I am getting bored of what I have and need something new!

Have you tried Tilapia?

I was surprise how much the boys really liked it. I have tried cooking is several different ways and it has been very successful. Here is one recipe:

Take the Tilapia and cover it was lemon or lime juice. Add some seasonings (SpadeL makes a delicious fish seasoning). Place the Tilapia in a baking pan... like 13x9. Slice up an onion in large pieces (round like onion rings). Place the onion pieces on top of the fish. Cover the baking pan with aluminum foil. Cook at 350 for about 30 minutes.

Easy, fast, and delicious!

enchiladas:
saute fallowing
1 onion
2 cloves garlic
2 zuccini
2 yellow squash ( thin long kind)

add vegetables to a bowl with
1 can black beans
shredded chicken (however much you like)
1/4 to 1/2 can of green enchilada sauce
mix well

put one thin layer of green enchilada sauce on bottom of 9x13 dish

fill tortillas and roll and set in dish

cover with the remaining green enchilada sauce ( big can)

cover with mexican mix cheese and put tin foil on top

bake at 350 for 1/2 hour take off tin foil for last ten minutes

Well, that was very nice of Kaija, but it is really not a very exciting blog. I just use it to keep track of what I have cooked and what my family thought of it. Because I literally can't remember the next day. Then someone asks for something for dinner and I'm like huh? do I know how to make that? where is the recipe? Now I know the answer: on my blog.

An easy one I like to make is Orange Chicken and Rice. I keep the ingredients separate so people can assemble it according to their own tastes but I like ALL of it.

1 c rice (I use brown and let it cook longer)
1 c chicken broth
1 c orange juice (I just spoon out some frozen concentrate and add water)
1/4 t nutmeg
4 cooked chicken breast halves, in bite-size pieces (I used one of those cans from Costco this time)
11-oz can mandarin oranges, drained
1/4 c chopped walnuts


Combine, rice, broth, juice, and nutmeg in a pot over medium heat (I used a rice cooker). Bring to a boil, reduce heat to simmer, and cook for 15 minutes. Add chicken to rice, cook another 5 to 7 minutes or until rice is tender. Remove from heat. Stir in oranges. Sprinkle individual serving with nuts. Makes 4 servings.
